Porridge is where plant milk quietly shines: oat milk doubles down on creaminess, soy adds body. Five minutes of stirring is the whole secret.

Method

  1. Combine

    Oats, plant milk and salt into a small pan over medium heat.

  2. Stir like you mean it

    Simmer gently for 6–8 minutes, stirring often. The starch releases slowly — that's what makes it creamy.

  3. Loosen

    Just before serving, stir in an extra splash of cold plant milk — the chef's trick for perfect texture.

  4. Top

    Bowl it, crown with fruit, drizzle with maple. Eat while it steams.

  • A pinch of salt makes oats taste more oaty.
  • Leftover porridge fries into brilliant oat cakes.
