Macadamia milk is the indulgent one: rich, rounded and buttery, and it steams and froths like a dream. Macadamias are native to the rainforests of Queensland and northern New South Wales, where Aboriginal peoples harvested them for thousands of years before commercial orchards spread to Hawaii and beyond. The milk is recent — Australia's Suncoast Gold launched a home-grown carton in 2014, and farmer-founded Milkadamia carried the idea to the United States soon after. It's naturally high in monounsaturated fats, with a subtle sweetness that never turns cloying. In coffee it rivals the barista oat blends, and it's lovely in smoothies, granola and desserts.
