Chia milk is the newest seed milk on the shelf, but the seed itself is ancient: Salvia hispanica was a staple of Aztec and Maya diets, valued enough to be paid as tribute, and its name likely comes from a Nahuatl word linked to oiliness. The first carton chia milks appeared only in the mid-2020s, led by SOW Seeds of Wellness with Chilean-grown seeds, after Mamma Chia's earlier bottled chiamilk. Expect a mild, faintly nutty taste with a silky body that comes from the seed's soluble fibre rather than added gums. It's light on calories while carrying omega-3s and fibre, and it slips easily into smoothies, iced coffee, overnight oats and cereal.
