Walnut Milk

Walnuts are among the oldest tree foods we know, spreading from ancient Persia along trade routes until the 'Persian walnut' filled orchards from China to California. Walnut drinks are nothing unusual in China, where the Six Walnuts brand sells billions of cans a year and walnuts are prized as food for the brain. In the West, walnut milk is still a small niche, championed by Elmhurst 1925 with a simple two-ingredient recipe. The taste is earthy and gently tannic, rich without heaviness, and it carries more plant omega-3 than most nut milks.
