Buckwheat Milk

Despite the name, buckwheat is no wheat at all but a cousin of rhubarb and sorrel, domesticated in southwest China perhaps six thousand years ago. Its triangular seeds travelled the world to become Japan's soba noodles, Russia's kasha and Brittany's lacy galettes. The milk aisle has finally caught up: BAM launched America's first buckwheat milk in 2023 and later turned up on Shark Tank, Vancouver's BUCK pioneered the idea in Canada, and Germany's Natumi makes an organic buckwheat drink for European shelves. Naturally gluten-free and rich in minerals, buckwheat milk is creamy with an earthy, toasty flavour β€” closer to hazelnut than to oat. It's excellent in coffee, porridge and baking, and it gives pancakes a very knowing wink.
