Rye Milk

Rye is the grain of the European north — the backbone of Scandinavian crispbreads, German Vollkornbrot and the dark, dense loaves of Eastern Europe, where it's been grown since the Bronze Age because it shrugs off cold and poor soil. As a milk, it's brand new. In 2024 the Spanish dairy group Pascual launched Europe's first mainstream rye drink under its Vivesoy brand, made with 100% Spanish-grown rye from Castilla y León. If you're braced for bitterness, relax: rye milk is smooth, creamy and quietly sweet, with a wholesome, bready character and naturally high fibre. Try it in coffee or muesli, or just drink a glass to say you got there before everyone else.
