Teff is the smallest grain in the world: a hundred and fifty seeds weigh no more than a grain of wheat. Yet it has sustained Ethiopia and Eritrea for thousands of years as the soul of injera, the tangy fermented flatbread at the heart of every meal. Naturally gluten-free and rich in iron and calcium, teff has lately caught the plant milk world's attention. Teff-ly, founded by Ethiopian-born Yosef Brhane, launched the world's first teff-based milk, while Spain's Amandín makes an organic teff drink sweetened only by the grain itself. The flavour is lightly malty and nutty, with a hint of cocoa. It's lovely in coffee and porridge, and well worth hunting down.
