Made from the humble yellow split pea, pea milk is one of the quiet overachievers of the modern plant milk era. Rather than blending whole peas, producers such as America's Ripple and Sweden's Sproud isolate the pea's protein and blend it with water and oils, which delivers around eight grams of protein per glass with remarkably little sugar. Launched in the mid-2010s, it's won a devoted following among athletes, parents and baristas. The taste is creamy and surprisingly neutral (no grassy pea flavour in sight), with a body close to semi-skimmed dairy. It steams and froths well, so it's a solid bet for flat whites, smoothies, porridge and rich, cheese-style sauces.
